My wife is an extreme organic shopper, meal preparer and cook, and follows the LDS Word of Wisdom literally. You’re also correct that withdrawing from processed sugar increases sensitivity to natural sugars and foods. Surely God created wonderful-tasting foods for his children and was insightful to warn us against counterfeit substitutes.
I can’t confirm if the biological explanations you quote are correct, but I can confirm from what I personally experience that the cause/effect relationships you describe are right on.
